Here are some of our cooking club Leaders' favorite recipes made in
2007. Renaissance Stuffed Mushrooms

12 Baby ‘Bella
mushrooms 1 tsp Italian-style seasoning
2 cloves garlic peeled and
minced 1/3 cup finely chopped walnuts
3 Tbsp chopped green
onions ¼ cup seasoned bread crumbs
1 (8 oz) package cream cheese,
softened ¼ tsp ground pepper
¼ cup grated Parmesan
cheese 3 Tbsp red wine vinegar
¾ cup shredded Cheddar cheese
Preheat oven to 350 degrees.
Remove stems from mushrooms. Set aside
caps. Finely chop stems, discarding hard pieces.
In a bowl, mix all remaining ingredients,
including the stems. Stuff mushroom caps with the mixture. Arrange on a
baking sheet and bake in the preheated oven for 20 to 25 minutes or
until lightly browned.
